Recipe :: Lime & Red Pepper Chicken

You know your life is busy when the only time you have to eat is when you're driving in the car, multitasking at work or after 8pm. That may or may not have been a quick synopsis of my eating habits. I also have a strong feeling that I'm not the only one who eats like this, considering Americans are known for always being on the go. The other night, my husband and I finally had a little time on our hands and decided to make something new and delicious for dinner – we just didn't know what. The only thing we knew was that we were starving and had chicken thawed out in the fridge. I almost made our typical herbed chicken with wild rice meal, but my husband pointed out that he wasn't trying to eat healthy like me (ha) and he wanted some pasta!

Super Bowl Party the EASY Way!



For about 95% of women in the US, the SuperBowl only means one thing – Party! Personally, I enjoy watching football, but considering my team didn't make the cut this year, my main priority for SuperBowl Sunday is good food! While Pinterest has a bazillion cute ideas for SuperBowl parties, that's not the route we're taking here folks. I'm talking bout plain, easy snacks that hack what Pinterest people take hours to make. We all know…"nobody ain't got time for that!"

No-Bake Granola Energy Balls


Last week, a friend and I took the step to devote the next few months to the workout program p90x so we can get ripped! Just kidding, these wimpy noodle arms aren't going to be "swoll" anytime soon. Growing up my childhood best friend actually nicknamed me "Noodle," if that gives you any indication towards my body type. Regardless, after 90 days of p90x workouts, I guarantee you that I will be able to do a real pushup! Considering this intense workout program, I have also started to alter the food I eat in order to stay energized throughout the process. I've always been a hearty eater and I actually enjoy healthy foods like spinach, but I have one major problem…I have a terrible sweet tooth! I asked the dentist to remove it, but he said I have too many to pull. Therefore, a habit must be changed and the easiest way to change a bad habit is to find a healthier alternative!

I altered an "energy ball" recipe, of which most of us have heard of by now, thanks Pinterest. My variation provides the sweet munch, without a sugary punch (some other recipes have a ton more sugar). The best part about them? They're DELICIOUS! Seriously they can work as a pre-workout snack or as a substitute for a cookie-craving! The taste reminds me of the beloved no-bake cookie, but a much healthier version!

Peanut Butter Pretzel Rice Krispie Bars



The other day my husband put in a special request for some rice krispie treats, but I figured – why not put a spin on the original recipe? I remembered seeing a recipe a while back that seemed like the perfect combination of salty and sweet, but of course I had to alter it to complete perfection! These ended up being so good that I had to share them with friends and coworkers. I should have nabbed a picture right when they were done, but until next time…you get this lone ranger.

The other night, my husband and I had some friends over for dinner and while pondering what to make, I remembered something Paula Deen once said.

"You know it's a good recipe if it starts with a stick of butter."

Well…there I was, in the kitchen, on a Saturday night with a stick of butter, just trying to make a delicious meal for some friends. I wasn't about to serve a diabetes dish though, so I cut the stick in half – sorry, Paula.

Homemade Kettle Corn Recipe




Every time I go to the state fair I always have to get myself a big bag of kettle corn, trying to ignore the fact that I'm paying $6 for about 10 cents of popcorn. The other night I got a craving for some good ole kettle corn and I figure, why not just make some at home? Better yet, it's practically free.

Before throwing my chicken pot pie into the oven, I decided to get creative - forgetting that I suffer from dull-kitchen-knives syndrome. Aren't my leaves just awesome? Laugh all ya want, but do not underestimate the deliciousness of this! Just talking about it makes me hungry (or the fact that i'm in Panera and am a bread addict).

Happy Halloween!




Happy Halloween everybody! Halloween brings back fond memories of making homemade popcorn balls that my dad would hand out to trick-or-treaters, while blasting spooky music from our house speakers. My mom, brother, sister and I would go trick-or-treating, always making sure we went to the neighbor's house that gave out full-size candy bars. While no one hands out homemade treats for trick-or-treat night anymore, it doesn't mean that you can't still make fun treats to hand out to friends, family and coworkers!

Pumpkin Pie Perfection




Amidst the barrage of political warfare, my ears are practically ringing from Democrats and Republicans yapping at each other, when all I want to do is watch The Real Housewives. I do find it quite the oddity, the fact that hardly any of the women on the show are actually housewives. Some are businesswomen, some are socialites and heck most aren't even married. Soon, the label, "housewife" will sit on the same shelf as dinosaurs, called extinct.
