Banana Coffee Bread Recipe



This is only half of what the recipe makes!

Screen licking, perfectly acceptable.

Banana Coffee Bread


1/2 cup shortening
1 cup sugar
2 eggs
3/4 cup mashed bananas
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla

1. Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Mix in bananas and vanilla.
2. Sift together dry ingredients, add to banana mixture, mix well.
3. Pour into greased 9x9" pan. Bake at 350 degrees for 30-35 minutes.

This is my absolute favorite banana bread recipe and it's ridiculously easy to make. Every time I make it, it turns out perfect. My husband and I devoured the entire batch within 2 days (fatties!) The hardest part is washing hand-washing the dishes afterwards (I would probably trade my left arm for a dishwasher). I got this recipe from my mom, who has been making it for years, but of course, I can't follow a recipe without altering it. To save time, I usually just throw 1 or 2 bananas into the mix, instead of measuring. It's best to use really ripe bananas or when the peel gets brown spots, I feel like they're more sweet at this point! Try out my recipe and let me know what you think! In the pictures, I used a loaf pan, the recipe calls for a 9x9" pan, but if you want to double the recipe and share the love (food = love to a man), just use a 13x9" pan.
